shrimp stir-fry and some winter love

Ingredients - we used shrimp instead of chicken… 

• 2 cups white rice
• 4 cups water
• 2/3 cup soy sauce
• 1/4 cup brown sugar
• 1 tablespoon cornstarch
• 1 tablespoon minced fresh ginger
• 1 tablespoon minced garlic
• 1/4 teaspoon red pepper flakes

• 3 skinless, boneless chicken breast halves, thinly sliced
• 1 tablespoon sesame oil
• 1 green bell pepper, cut into matchsticks
• 1 (8 ounce) can sliced water chestnuts, drained
• 1 head broccoli, broken into florets
• 1 cup sliced carrots
• 1 onion, cut into large chunks
• 1 tablespoon sesame oil

1. Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 20 to 25 minutes.
2. Combine soy sauce, brown sugar, and corn starch in a small bowl; stir until smooth. Mix ginger, garlic, and red pepper into sauce; coat chicken with marinade and refrigerate for at least 15 minutes.
3. Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Cook and stir bell pepper, water chestnuts, broccoli, carrots, and onion until just tender, about 5 minutes. Remove vegetables from skillet and keep warm.
4. Remove chicken from marinade, reserving liquid. Heat 1 tablespoon sesame oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 2 minutes per side; return vegetables and reserved marinade to skillet. Bring to a boil; cook and stir until chicken is longer pink in the middle and vegetables are tender, 5 to 7 minutes. Serve over rice.

spending my first snow day of the year getting my jobs/home organized~  here is a new app i am loving and wanted to share: 

For many of us, getting organized and increasing productivity are big goals in the new year. The good news? You don’t have to make huge, workflow-altering changes in order to work more effectively. Consider the following small steps you can take with Evernote to make 2014 your most productive year yet:

1. Hold more effective meetings. Create an agenda note in Evernote for each meeting. Include any files that need to be discussed, snapshots of handwritten notes, and any other details to get attendees prepared. If you work on a team, keep your meeting agendas in a shared Business Notebook so everyone can access the details of upcoming meetings and review action items that result from conversations.
2. Brainstorm better. Whether you’re going solo or working with other people, ideation is often a key step in moving projects forward. When brainstorming, use Post-it® Notes to jot down ideas. Arrange (and rearrange) them on the wall in groups that outline next steps for your projects. Use Evernote on your mobile device to capture them for easy reference.

A Harvard Business School study stated that there are 4 distinct stages of growth in a network marketing company – Foundation, Concentration, Momentum, and Stability. The Momentum Phase is when the company experiences phenomenal growth. Both retail and distributorships explode in terms of expanding growth. It is during this period that the company virtually sweeps the nation. When a company’s sales reach about 50 million annually (4.2 million a month), they reach what is called “critical mass” (sales go vertical right off the graph). Also, approximately 2/3 of the company’s growth of new distributorships occur during this period of time. Let’s assume you have an organization which is producing an override bonus check to you of $1,000 per month. When the company reached critical mass, distributors almost automatically experience a ten-fold increase in their earnings. In other words, $1,000 per month becomes $10,000 per month. This is the reason for getting involved on the ground floor, so you will experience the benefits of explosive growth.

How cool is this story!

As a mom of 2 young kids with one playing t-ball, a teacher in the transition of switching schools, wife of a HVAC journeyman and rancher during the busiest time of year for air conditioning and hayfield (summer) and a Sunday school teacher directing VBS . . . I couldn’t add anything else to my plate. So, I joined Rodan + Fields as a Consultant, just to get a greater savings on the Reverse Regimen. There's really not much that compares to time freedom. I had no idea just 7 short months ago that R+F truly would offer me the life I've been hoping and praying for since becoming a parent. Yes, it takes work. I put in a few hours a day (maybe), all from home . . but the rewards are endless, not to mention the many lives you bless along the way. Feeling grateful today as I near the 1 year mark of the day I lost my job after 10 years of hard work. I plan to never live someone else's dream again.
